Sweet potatoes that are cubed and caramelized in butter, brown sugar and maple syrup with crumbled tempeh bacon, srirarcha, mint, cilantro, avocado, and lentils.

  1. Peel and cube 3 jumbo sweet potatoes.
  2. In a large skillet on medium heat add butter, brown sugar and sweet potatoes.
  3. cook for about 45 minutes, or until potatoes are tender and carmelized, then add salt, smoked paprika and 1 tbsp of maple syrup, mix until potatoes are coated. Youmay need to turn down the heat, so you dont burn them.
Tempeh
  1. To cook tempeh, boil in water for 10 minutes.
  2. Crumble tempeh and add soy sauce, paprika, garlic powder, maple syrup.
  3. Heat oil in a small skillet and add tempeh, cook for 6 minutes and remove from heat.
