Preheat oven to 350. Prep 3 small baking pans or an 8×8 pie pan with butter and set aside.
Peel and slice peaches. Place in a mixing bowl. Toss with sugar, lavender, vanilla, and corn starch.
Separate in dishes or add to pie dish.
In a separate mixing bowl toss oatmeal, flour, half the toffee chips, brown sugar, cinnamon, salt, and butter.
Using a pastry cutter or your finger crumble topping. Add melted butter and mix. Crumble on top of peaches. Add toffee pieces. Place in oven and bake for 45 minutes. Remove from oven, slightly cool and enjoy with cold vanilla ice cream.
