Sweet Potato/ Mascarpone rolls

  1. Gather your ingredients. In a mixing bowl add 1/2 cup of warm milk with 1 tbsp of yeast and let rest for 15 minutes.
  2. Next heat remainder of milk and 3 tbsp of butter till hot. Next add honey and salt. Make sure everything has melted, milk should be hot. Tip: heat in microwave for about 1-1.5 minutes.
  3. Now add sugar to yeast and milk. Then add sweet potatoes, flour, mascarpone, and knead using a the dough attachment. You can also use a spatula if preferred or if you don’t have a mixer. Knead 5-6 minutes. Dough will be very very sticky.
  4. Melt 1 tbsp of butter and grease a pie dish. To remove, dust dough with flour, dust hand and a plate with flour. Place dough on plate and dust with more flour. Divide dough into 13 balls. Fold each ball inward until top is rounded and smooth, place dough seem side down in middle of dish and repeat with remainder. Place then all together, they all need to be touching. Cover with plastic and place in a warm place for 2 hrs or longer until doubled in size. Tip: if you have an oven that can bread proof button you can cut your time in half.
  5. When rolls are ready, preheat oven to 350. Melt 2 tbsp of butter and brush top of rolls. Bake 30 minutes.
  6. When done baking remove from oven and again brush tops with 2 tbsp of melted butter with a drop of honey. Enjoy these super soft delish rolls.
