Beet bacon grilled cheese
cheesy, crispy grilled cheese, with garlicky beet spread and turkey bacon. Not your basic grilled cheese.

  1. Preheat oven to 375. Wash beets and drizzle with oil, wrap in aluminum foil.
  2. Place beets on cookie sheet and bake 65-70 minutes. Remove and cool.
  3. Slice bread and cook turkey bacon.
  4. To make spread, toss beets, mayo, paprika, cilantro, salt, and garlic in a blender or food processor. Blend until mostly smooth. should make 2 cups.
  5. Butter one side of a slice of bread, spread mayo on the other side. Repeat with rest of slices.
  6. Spread half the mozzarella on the side with mayo, and on the other slice place place two slices of the southwest blend, and 1 slice of provalone. Repeat with the next two slices of bread.
  7. Heat oil on medium to low heat, when hot place the first two slices of bread in, cover and let cook for 3-5 min, make sure not to burn.
  8. Remove bread slices from heat, and cook the rest. Break eacg pice of cooked nacon into two, place four of the broken slices on one side of bread, smear with beet spread. Place arugula on the other piece of bread and sandwich the two together. Slice sandwich in half. Repeat with the remainder and enjoy. Save left over beet spread for your burger, chicken, potatotoes or wherever you think may taste the best.
