Whole 30/Paleo Ghanaian Cauliflower Jollof Rice

Hi Everyone.  I’m sitting here late on a Saturday night trying to finish this blog post.  The hard part is that my daughter is hell-bent on not letting it happen.  She should have been asleep long ago, but I was on a long distance call for over an hr.  I’m finally able to start.  This is cauliflower jollof rice, whole 30/paleo style.  Jollof rice is a West African dish.  This dish is usually rice cooked in a tomato based sauce with meat, at least that.  The rice becomes an orange color due to the tomato sauce.  Different countries in West African have their own variations.  I’m not really sure where it originated from but Nigerian and Ghanaians both claim to have the best ones.  Ghanian Jollof usually consists of beef that has been cooked and fried, with mixed vegetables,  and Jasmine Rice.  Sometimes seafood is used.  Nigerian usual use Parboiled or long grain rice, it does not have meat in it, there is usually plantains, or another side dish.  I’ve been making this dish since learning how to cook, I come from a long line of family who love to cook.  Until 2 years ago I did not eat Jollof,  I don’t know why I didn’t, though I’ve been making it forever.  I wish I had loved this dish earlier in life.  This recipe is a whole 30/paleo healthier version, the rice is replaced with cauliflower rice.  The beef is cooked till tender, air fried and cooked in tomato sauce, the cauliflower is added the last few minutes.  You can also use this recipe if you are not on whole 30, just replace the cauliflower with real rice.  This recipe does make alot, you could halve it, or quarter it.  I hope you like it.  Make sure ti comment after you ry this recipe.

Ingredients
  • 2 lbs chuck beef cut into bite size pieces
  • 2 tsp salt
  • 1 24 oz can diced tomatoes
  • 1 16 oz can tomato sauce
  • 1/2 cup olive oil
  • 10 oz green beans
  • 2 tsp hot pepper crushed or cayanne pepper
  • 1 large onion sliced
  • 1/4 cup coconut aminos
  • 2 tsp paprika
  • 2 tbsp crushed ginger
  • 2 heads cauliflower blended and riced or 10 cups of cauliflower rice
  • 1 tsp ground curry
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1/4 Water to thin sauce a little

Instructions
  1. Add beef to a medium pan filled with water, and add 2 tsp of salt. Cover and bring to a boil on medium heat. Cook for 1.5 hrs, or until tender.
  2. Drain the beef, place on in air-fryer for 10 minutes. You could put it in the oven on 370 for 10-15 minutes.
  3. Next heat 1/2 cup of oil in a deep pan, add onions and cook 2-3 minutes. Add peppers and cook an additional 2 minutes.
  4. Stir in tomato paste, cook 1 minute. Next add all the tomatoes, beef, aminos, rest of seasonings, and ginger. Cook 45 minutes, on medium to low heat. Add more salt if needed.
  5. Add green beans, cook another 15 minutes.
  6. Add in cauliflower, and mix well. Cook an additional 10 minutes. Remove from heat and enjoy a healthier version of this West African Dish. Dont forget to rate and comment, Thank you, This African

    Thanks for another delicious meal.
    I hope to buy an Instant Pot this year, really like it. And also the attachments for my Kitchenaid to make zucchini and sweet potato ‘strings’.
    So I’m working my way towards a healtier life.
    About the French Fries (and Pork), with your skills you could make the fries. Just back them twice. That’s what the Dutch do. And mayonaise ofcourse. But l guess you know all that.
    Did you eat Surinamese food in the Netherlands? I’m from Suriname. We like to eat ‘teloh’. It’s a snack made from cassave/tapioca. Cut it like fries. Season it with garlic, pepper and salt and bake it in oil. We eat it with saltfish (bakkeljauw) or ‘trie’ (small seasoned fish) That’s our French fries, kind of:)

    We’re Ghanaian. I’m the only member of the family doing the Whole30 diet this month. Avoiding the contraband all around me has been – well – torture. Especially the sweet Hawaiian rolls. And boy oh boy do I miss waakye and Kenkey!!! And chocolate. Then you come along with the cauliflower hollow idea. Wow. Yeah. You rock. You angel!! That’ll work. It won’t be as tasty as real rice but it will have to do, We just bought an Instant Pot and are loving it. Plus we have an air fryer. Gonna get to work and try your recipe out. I worry it’ll be soggy? No? However, many thanks. V V.

      Hahah I know the feeling, my mom eats fufu everyday, but my husband is not Ghanian and he eats whatever I cook 😁. You are totally welcome, I have to watch my self not to want to eat bofrot everyday since I can make it here. to avoid it being soggy, make sure that the cauliflower is cooked and to squeeze all water out of it.
