  1. Preheat oven to 350. Mix all dry ingredients (both flours, baking soda, baking powder, salt, cinnamon, and cardamom) together and set aside.
  2. In a mixing bowl, whisk coconut cream, maple syrup, vanilla, rum extract, water and cashew butter until well combine. It is okay if you have some solid pieces.
  3. Next add banans and mash with a fork or potato masher, to be as smooth as possible. Then add coconut milk and combine.
  4. Fold in Flours, until wet. Next fold in lightly beaten eggs and coconut oil. Make sure you are not over mixing, no more than a minute.
  5. Fold in blueberries
  6. Line muffin pan with 12 cupcake liners, scoop two tbsp full into each liner. Bake in oven for 30 minutes, once timer goes off, immediately brush the top of each with coconut milk.
