Whole30/Paleo Pinapple and Zoodles Stir Fry
Whole 30/ Paleo stir fry, with zucchini noodles, ground meat, and grilled pineapple. Healthy and delicious whole foods.

  1. Prepare ingredients as written. Heat 1 tbsp of ghee in a large deep skillet, high to medium heat. When hot add spiralized noodles. Cook about 3-5 minutes, add a pinch of salt. Make sure to stir, so all is cooked. When done cooking, drain and squeeze out excess water. Set aside.
  2. Heat 1 tbsp of ground meat, add salt, brown about 8-10 minutes on medium heat.
  3. Meanwhile, place pineapples in air fryer and hit the fry button and cook for 10 minutes. You could also place on a cookie sheet on 400 degrees for 10 minutes. Place on separate plates and set aside. Return skillet to heat.
  4. Heat another olive oil/sesame oil on medium to high heat in a deep skillet or wok. Add onions, and minced garlic, cook 1-2 minutes or until fragrant. Add celery, pepper, and jalapeno, cook another 5 minutes. Toss in Bok choy and cook about an additional 5 minutes.
  5. Add meat to veggies, then add cumin, coriander, vinegar, paprika, white pepper and coconut aminos. Cook for 3 minutes. Add zoodles and diced pinapples to meat and mix well, cook an additional 3-5 minutes. Mix in chili oil. Add addition salt as needed.
