Happy Friday! This month is going really fast. I’m currently on vacation, yay me. So as you all may or may not know, I’ve been working with Pederson’s farms since April. Pederson’s Farms is a company that sells meat products that are humanly raised, natural, organic, and raised without artificial preservatives or antibiotics. They are also sugar-free and Whole30-approved, which is awesome if you are looking for the utmost in wholesome.
Totally inline with corporate social responsibility, Pederson’s has partnered with Feeding America. They offer subscription boxes with a built-in donation to Feeding America that helps feed Americans who don’t know where their next meal will be. Each $1 donation feeds up to 10 people and $5 feeds up to 50 people. It is such a great opportunity to receive wonderful food, yet also contribute to a great cause. I’m all about helping as many people as I can, so I hope you all can help me accomplish that.

As a sneak peak, I took the classic jalapeño popper and turned it into a casserole using Pederson’s No Sugar Added Hickory Smoked Bacon. In order to make the recipe Whole30 compliant and low carb, I used riced cauliflower instead. I also made a cashew cream sauce to replace the traditional cream cheese. I used pickled jalapeños and fresh jalapeños to give it an extra kick. I think you guys will really enjoy this recipe. On a scale of easy to hard, this recipe definitely falls on easy.
