Hi, Guys. Hows it going? I can’t believe it’s already September. I can’t believe its is almost Fall, I mean summer was barely here. Peach Season is almost over, I almost missed posting this peach crisp recipe again. I feel like summer aka peach season is the shortest season, don’t get me wrong I’m sick of the heat, I mean we have had heat advisories. It’s pretty scary, nonetheless with Summer ending that means Winter will be coming, lol for all you GOT fans. I did accomplish some things this somber, I did some furniture rehab, finished my stencil wall, and almost completely done with my formal living room, we enjoyed a mini sort of honeymoon in California, completely Ava free. I started working out again, but recently had to stop a bit, it felt like I pulled a something in my lower back, hard to do squats with bad knees and pain in my back. I’m very sad to see Summer go though. I like the fact that I go to work when early morning, qhen returning there is still daylight. Winter is the worst, being that it is the opposite of summer. I’m looking forward to all the fall gear and yummy eats, including going to Apple Orchard. erwins is my favorite, we go every year, it has become somewhat of a tradition. Ava will be so excited to pick apples. I will be pulling out my sweeter and boots in a matter of weeks. Who else enjoys Fall?
Last Summer I put up a picture of this yummy treat 9peach toffee crisp), which I meant to remake and post a recipe here, I guess at the time, I didn’t realize that there were no more fresh peaches. I was never able to find fresh peaches to make this recipe, I refused to use frozen peaches, just because they make the liquidy, haha is that a word. How could I make it without fresh juicy yellow peaches. I’m happy to finally share this recipe. I used lavender extract to give the peaches something extra and flowery. Ans mixed toffee in the topping, and sprinkle some on to. The toffee melts and gives the topping some extra sweetness and crunch, that goes great with nice cold ice cream. We enjoyed our’s with homemade coconut maple nice cream, with a touch of banana. Don’t forget to comment.

- 5 whole yellow peaches
- 4 tbsp sugar
- 1 tbsp corn starch
- 1 tsp lavender optional
- 1 tsp vanilla extract
- 1/2 cup oatmeal
- 3/4 cup flour
- 3/4 cup brown sugar
- 1/2 cup toffee chips I used Heaths brick o brittle
- 1 tsp ground cinnamon
- 1/2 tsp sea salt
- 8 tbsp melted unsalted butter diced
- 2 tbsp melted unsalted butter

- Preheat oven to 350. Prep 3 small baking pans or an 8x8 pie pan with butter and set aside.
- Peel and slice peaches. Place in a mixing bowl. Toss with sugar, lavender, vanilla, and corn starch.
- Separate in dishes or add to pie dish.
- In a separate mixing bowl toss oatmeal, flour, half the toffee chips, brown sugar, cinnamon, salt, and butter.
- Using a pastry cutter or your finger crumble topping. Add melted butter and mix. Crumble on top of peaches. Add toffee pieces. Place in oven and bake for 45 minutes. Remove from oven, slightly cool and enjoy with cold vanilla ice cream.
