  1. Bring a pan of water with 1 tsp of sea salt to a boil, add diced potatoes and cook about 8-10min.
  2. Heat a Medium skillet on high heat, add a little oil, and cook bacon when hot. Cook bacon until browned and slightly crispy.
  3. Drain Potatoes when ready. Add 1 tbsp of ghee to bacon pieces, onions, then add potaotes and onions. Stir so potatoes are covered with ghee. Cook for 3 minutes.
  4. Next add all parsley, salt, paprika, umami, add duck fat or fat of choice. Cook for 10 minutes. Making sure you stir/flip to cook all sides. Potatoes will start to brown, remove from heat.
  5. Enjoy with eggs your preferred way, a drizzle of whole 30 ranch. I also like it with smoked salmon/nova lox. Either way its pretty filling and delicious. I like to drop my eggs in a hot oiled skillet, cook 2 minutes on each side, tiny bit of umami seasoning or pink sea salt and smoked paprika. Comment on how you like this recipe.
