Hi There, long time :). It is February now, which means it still cold out here in the Midwest. As much as I hate the cold I still choose to be here crazy right lol. I’m hoping it will be a short winter as predicted by Groundhog. I can’t take any more of winter, this winter has been an odd one, we go from warm to freezing, dry to snow, then snow and freezing rain. A girl needs some consistency around here. And they say global warming isn’t real smh. I’m excited about spring because I get to celebrate another birthday, let’s say I’m in my 30’s, not knocking on forty for some years. I honestly feel more like 27 ish haha. So there are certain foods that are great to have in the winter, especially foods that are warm and comforting, like chicken noodle soup and pho. Certain sweets for winter also, like hot cocoa, and spiced cakes. Banana bread, on the other hand, is an all year thing, whether its hot or cold outside, a good warm sliced banana bread is always a good deal. In this case blueberry cardamom paleo banana bread muffins. Because I mostly like to remain refined sugar, dairy, and grain-free, I wanted to create banana bread that I can enjoy without feeling super guilty and with less possibility of inflammation. I decided to use Birch Benders Pancake and Waffle mix that I bought from Costco, combined with Tapioca Starch. This is my fourth time making this, the times that I did make it, it was either too dry or too moist. With some minor tweaks, I think I finally found the right balance. Paleo bread tends to be too dense and dry. Though this will have some density, it also has cashew butter and coconut milk to give it some healthy fat and draw in more moisture. I must say I was very pleased, gave some to my neighbors and they are almost gone. The hubby and little girl enjoyed it. Hope you all do too.

- 1.5 cups birch benders pancake and waffle mix its paleo
- 1 cup tapioca starch
- 1 tsp baking soda
- 2 tsp cardamom
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 5 tbsp maple syrup organic
- 1/4 cup coconut cream or solids warmed
- 3 tbsp creamy cashew butter unsweetened natural
- 1/2 cup coconut milk plus 2 tsp canned I prefer trader joes
- 4 whole ripe bananas
- 1/4 cup melted coconut oil
- 1 tsp rum extract
- 1 tsp Vanilla
- 1 tbsp Water
- 2 whole room temp eggs lightly beaten
- 1 cup blueberries rinsed and dried
- 2 tbsp Coconut milk

- Preheat oven to 350. Mix all dry ingredients (both flours, baking soda, baking powder, salt, cinnamon, and cardamom) together and set aside.
- In a mixing bowl, whisk coconut cream, maple syrup, vanilla, rum extract, water and cashew butter until well combine. It is okay if you have some solid pieces.
- Next add banans and mash with a fork or potato masher, to be as smooth as possible. Then add coconut milk and combine.
- Fold in Flours, until wet. Next fold in lightly beaten eggs and coconut oil. Make sure you are not over mixing, no more than a minute.
- Fold in blueberries
- Line muffin pan with 12 cupcake liners, scoop two tbsp full into each liner. Bake in oven for 30 minutes, once timer goes off, immediately brush the top of each with coconut milk.

Birch Benders Pancake and waffle mix; don’t have those in the supermarkets in the Netherlands. So I just read the recipe and imagine how it will taste. It tastes very good:)
Actually my mindset about changing my (and family) diet is basicly green smoothies and cooking healthy. So it will take some time. But I keep pushing. Your blog and IG account inspire me. Thanx
Hi, thank you so much for your comment, it’s really encouraging, sometimes I get down on myself because I don’t post enough, and I also feel like no one really gets to see my IG feed and blog. It really does lift my spirits to see that people like you actually check it out. So far I’ve assisted a lot of people I know on their whole 30 journeys, its something I’m passionate about. I may not eat Whole 30 every day of my life, but I’ve found the balance of maintaining at least 70 percent of my diet whole 30. It’s too bad you don’t have birch blenders there, I wish Amazon could ship to Europe. It’s awesome that you are trying to lead a healthier diet, it will be good for you and your family. Fyi I miss the canned rice porridge and dutch patat frites lol.
Don’t worry about your blog and IG account. It’s not yet 5 years since you started. Cause that’s what it takes to get more notoriety. (Don’t know if I’m using the right word here). But I guess you know what I’m saying.
