Hi there, It has been a little while since my last post, I’ve enjoying the fact that winter is coming to an end, haha. I’m excited as we have entered spring, and guess what? I was born on the first day of spring. My birthday was a week ago, I can’t believe how quickly that came, but I am happy that I’m still here, hopefully a year wiser hehe. On my birthday the hubby took me out to dinner,I decided to go with a pretty yellow dress, since it was the first day of spring. We went to a restaurant that is located right in the center of downtown Detroit, an area called Campus Martius. This particular area has been getting upgraded with new buildings, restaurants, shopping, sports centers, ect., which is great, there are so many beautiful places in Detroit that are thriving but mostly the rest of the country only gets to see the negative. Like most downtowns there are a lot of things to do there in the summer and winter, like ice skating, enjoying great restaurants, concerts, family fun. I actually went ice skating once, but I think I fell on my butt more than I stood on my feet lol. The restaurant that I really wanted to try had great scenery, and great drinks but the food was ok, based on all the reviews I saw I thought it would have been better, but the more importantly, I still had a great time with my Hubby. I was off work for a total of 6 days, which went by all too quickly. It was back to work for me monday. Today I have a great recipe for rolls, sweet potato/mascarpone dinner rolls, yes you read it right, haha.
This roll recipe was kind of created with inspiration from Ava. As I am still recovering from working the last two days, I lounged around for most of it, in fact my day didn’t start till this afternoon. I received a call from Michael asking me what was for lunch, I totally had no clue. Earlier I had noticed Ava playing with a bag of sweet potatoes. As I went into my pantry I noticed a bag of green lentils that I had been using to make dip. I decided to make some lentil soup and I had some cauliflower sitting in the fridge so I went with that also. I needed some form of bread to go with the soup, so I thought “Wouldn’t It be nice to have some bread with the soup”, thinking of her playing with the potatoes had me gave me the idea that it would be great to add sweet potatoes to rolls, along with some mascarpone that I had in the fridge from making my birthday cake, yes I made my own cake. Let me tell you I was a bit scared that it wouldn’t work out, because it was too moist and sticky, but lo and behold the deliciousness and moistness of these rolls. Hubby said it was “Phenomenal”. That’s something great to hear as he is my toughest critic. It was super quick than most rolls and airy, with the right amount of sweetness and butter. Perfect of holidays or just everyday dinner. - 3 2/3 cups flour extra for dusting
- 1 1/4 cup milk I used 2 % organic milk from costco
- 1 tbsp fast rise yeast kroger brand yeast
- 1/2 cup mashed sweet potatoes cooked till very soft
- 8 tbsp unsalted butter
- 2.5 tbsp honey
- 1 tbsp of sugar
- 2 tsp fine sea salt
- 1/4 cup mascarpone sweet italian cream cheese

- Gather your ingredients. In a mixing bowl add 1/2 cup of warm milk with 1 tbsp of yeast and let rest for 15 minutes.
- Next heat remainder of milk and 3 tbsp of butter till hot. Next add honey and salt. Make sure everything has melted, milk should be hot. Tip: heat in microwave for about 1-1.5 minutes.
- Now add sugar to yeast and milk. Then add sweet potatoes, flour, mascarpone, and knead using a the dough attachment. You can also use a spatula if preferred or if you don't have a mixer. Knead 5-6 minutes. Dough will be very very sticky.
- Melt 1 tbsp of butter and grease a pie dish. To remove, dust dough with flour, dust hand and a plate with flour. Place dough on plate and dust with more flour. Divide dough into 13 balls. Fold each ball inward until top is rounded and smooth, place dough seem side down in middle of dish and repeat with remainder. Place then all together, they all need to be touching. Cover with plastic and place in a warm place for 2 hrs or longer until doubled in size. Tip: if you have an oven that can bread proof button you can cut your time in half.
- When rolls are ready, preheat oven to 350. Melt 2 tbsp of butter and brush top of rolls. Bake 30 minutes.
- When done baking remove from oven and again brush tops with 2 tbsp of melted butter with a drop of honey. Enjoy these super soft delish rolls.
