Hi everyone, It’s St.Patty’s day, means 3 more days before my birthday. I didn’t make anything Irish like I did last year. Last year I made an Irish cream bundt cake. This year I was scheduled to work, as I work every other weekend. I ended up not having to go into work because we were overstaffed, so I was given cto, which is when you get the option to stay home, but only 4 hrs at a time. It can be kind of nerve-racking, you sometimes have to go in your last 4 hrs. But fortunately I got the day off, now I’m on vacation for a week. So super excited, it’s more of a staycation. I spent most of the day resting up. We didn’t go anywhere for St.Pattys day, but it’s ok, I don’t have 1 drop of Irish in me, but the hubby does, and so does Ava. I’m still on my whole 18 challenge, lol. It is strict whole 30 but just for 18 days. So no alcohol, and also only whole 30 foods. Because on my birthday I want to be able to eat whatever I want. I order a cake for my birthday, usually, I make my own cake, but this year I wanted someone else to make it for me. I ordered my cake from www.butterbearshop.com, owned by food blogger Amanda from Amandasplate. She is super sweet and talented. I’ve been to the shop before, they have delicious treats. I can’t wait lol. With this Whole 30/Paleo recipe I made a stir fry, replacing the noodles with zoodles or zucchini noodles, lamb and ground beef mixed from Sparrow Market, in Kerrytown Ann Arbor. I wanted it to be a bit spicy as usual with notes of sweetness. Pineapple is definitely one of my favorite fruits, along with coconut and mangos. I decided to grill the pineapples to give it some smokiness. The husband really enjoyed it, he said it was his favorite, I always love his stamp of approval :). The recipe is short and easy, and I always have chili oil on hand. If you don’t have chili oil, use sriracha or red pepper flakes. If you are not on Whole 30 you can use real noodles.

- 4 medium zucchinis spiralized or use real noodles
- 1 tbsp ghee
- 2 lbs ground beef/lamb mix or any ground meat
- 1 medium chopped red onion sliced
- 2 whole baby bok choy chopped
- 2 stalks celery chopped
- 2 tsp ground corriander
- 1.5 tsp ground cumin
- 2 tbsp olive oil
- 1.5 tsp sea salt more if prefered
- 1 whole jalapeno dice and seeds removed
- 2 mini red peppers sliced
- 6 tbsp coconut aminos
- 6 rings pinapple grilled, add more if you want
- 1 tsp minced garlic
- 1/2 tsp white pepper
- 2 tsp smoked paprika
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- hot chili oil to mix in

- Prepare ingredients as written. Heat 1 tbsp of ghee in a large deep skillet, high to medium heat. When hot add spiralized noodles. Cook about 3-5 minutes, add a pinch of salt. Make sure to stir, so all is cooked. When done cooking, drain and squeeze out excess water. Set aside.
- Heat 1 tbsp of ground meat, add salt, brown about 8-10 minutes on medium heat.
- Meanwhile, place pineapples in air fryer and hit the fry button and cook for 10 minutes. You could also place on a cookie sheet on 400 degrees for 10 minutes. Place on separate plates and set aside. Return skillet to heat.
- Heat another olive oil/sesame oil on medium to high heat in a deep skillet or wok. Add onions, and minced garlic, cook 1-2 minutes or until fragrant. Add celery, pepper, and jalapeno, cook another 5 minutes. Toss in Bok choy and cook about an additional 5 minutes.
- Add meat to veggies, then add cumin, coriander, vinegar, paprika, white pepper and coconut aminos. Cook for 3 minutes. Add zoodles and diced pinapples to meat and mix well, cook an additional 3-5 minutes. Mix in chili oil. Add addition salt as needed.
