Hey there, this week has been a bit busy well with a winter advisory, ice, work and yeah a kid with beginning stages of pinkeye. My poor baby, going to preschool/daycare has her bringing lots of colds and coughs home, now this. I got a call while at work about her possible pink eye, luckily the hubby was able to get her, and I was able to schedule a same day apt. I actually believe it was caused by her lip gloss, it was a birthday gift that she thinks you put everywhere smh, as in eye liner, lips, eye shadow lol. The prescription for her eye drops were sent to a far away pharmacy, called the next day to get it close to home, somehow it still got messed up, that she didn’t get it till two days later. Thank God we caught it early so no redness though she has some drainage. Never knew you had to bribe a kid to get eye drops in lol.
Anyways go with another whole 30 post. I’m in the last leg of this whole 30 round, it’s not really a big deal to me because I’m kind of used to it. Every round that I do, I tend to have a favorite meal for that round. In my first round I was obsessed with my butternut squash soup, I ate it almost everyday, also Zuppa Toscana . Second round was Zuppa Toscana and Sweet potato nachos all great. This round I’m loving skillet potatoes, enjoying breakfast more than ever, making sure I eat three meals a day, my metabolism has gotten sharp haha, weighing less than when I was pregnant. This recipe is tasty and easy to make, I love gold potatoes because they taste buttery texture wise.

- 8-10 pieces medium sized gold potatoes washed and diced
- 1 tsp sea salt
- 3 pieces turkey bacon or bacon of choice chopped into small pieces
- 1 small onion diced
- 1 tbsp ghee
- 1 tbsp duck fat you can use bacon fat/any animal fat or just more ghee
- 1 tsp trader joes umami seasoning use a little old bay seasoning, half the amount
- 1 tsp smoked paprika
- 1 tsp dried parsley
- 3/4 tsp sea salt
- extra oil for eggs
- 6 whole eggs cooked per preference
- whole 30 approved ranch Im obsessed with Tessamaes creamy ranch
- water for boiling potatoes
Ingredients

- Bring a pan of water with 1 tsp of sea salt to a boil, add diced potatoes and cook about 8-10min.
- Heat a Medium skillet on high heat, add a little oil, and cook bacon when hot. Cook bacon until browned and slightly crispy.
- Drain Potatoes when ready. Add 1 tbsp of ghee to bacon pieces, onions, then add potaotes and onions. Stir so potatoes are covered with ghee. Cook for 3 minutes.
- Next add all parsley, salt, paprika, umami, add duck fat or fat of choice. Cook for 10 minutes. Making sure you stir/flip to cook all sides. Potatoes will start to brown, remove from heat.
- Enjoy with eggs your preferred way, a drizzle of whole 30 ranch. I also like it with smoked salmon/nova lox. Either way its pretty filling and delicious. I like to drop my eggs in a hot oiled skillet, cook 2 minutes on each side, tiny bit of umami seasoning or pink sea salt and smoked paprika. Comment on how you like this recipe.
