Hi, Everyone. Back yet again with another Paleo/Whole30 recipe. This one is very yummy. I have like a new obsession with cauliflower. Cauliflower was never one of those vegetables that I enjoyed. I found them to be very boring, flavorless, and just yucky. Until I went on my Whole 30 journey, they definitely would have been a no-no. But being unable to eat rice, pasta among other things, you start looking for different good carbs. Cauliflower is naturally high in Fiber, water, nutrient dense, low carb, gluten free and contains the B Vitamins. It also contains choline for memory, aids in weight loss, contains loads of other vitamins and, Antioxidants which help with fighting cancer. Cauliflower has a lot more health benefits outside of what I have named. It is a really good healthy food because it is so versatile. They taste great roasted, mashed, pureed, fried, and mashed. They can be super creamy. One of my favorite ways to eat it, is to boil, drain and puree with coconut cream and fresh garlic. Omg, it is so delicious. Another way I like to cook my cauliflower is to make cauliflower fried rice. Fried rice is pretty quick and easy to make, less of the carbs and fat, and also pretty filling. This is why I decided to make it along with these Whole30/Paleo instant pot pineapple short ribs. It was also pretty easy to make the short ribs, with just a few simple steps and 1 hour of cooking in the instant pot, these babies are done. No more waiting for 12 hrs in the slow cooker to make fall off the bone short ribs. The short ribs have an Asian/Hawaiian fusion taste, which I love. By the way, pineapple is one of my favorite fruits and I can eat them in anything. I am so thankful to my Hubby for purchasing it my instant pot. It has made some parts of my cooking so much easier, and it is being used almost daily. Such a thoughtful gift. Ok, no more rambling. Try this recipe ASAP, and you won’t regret it.

- 4 lbs beef short ribs cut the long way
- 1 tbsp extra virgin olive oil
- 1 small onion diced
- 1 med jalapeno seeds removed and diced
- 2 tsp fine sea salt
- 1 cup pineapple juice no sugar added
- 1 cup coconut aminos
- 1 tsp paprika
- 1 tsp chinese 5 spice
- 1 tsp ground ginger
- 3 tbsp tapioca starch
- 1 tsp minced garlic
- 10 rings of pineapples
- 1 head cauliflower placed in blender and riced or you can use 5 cups of riced cauliflower
- 2 cups cabbage sliced thinly
- 3 pieces green onions diced
- 1/2 tsp minced garlic
- 1/2 half onion sliced thinly
- 1 tbsp olive oil
- 1 cup mushrooms
- 2 whole eggs
- 1.5 tsp salt
- 2 tbsp hot sauce
- 2 tbsp coconut aminos
- 1 small carrot chopped
- 1/2 tsp fish sauce red boat is whole 30 friendly

- Turn instant pot on saute and add oil. When it beeps add onions and jalapenos. Cook for about 3 min. Next, add Short ribs, sprinkle with sea salt. Brown uncovered for the next 20 minutes. Making sure to Stir occasionally.
- Now, mix pineapple juice, coconut aminos, ginger, 5 spice, paprika, garlic, and tapioca starch. Make sure to whisk out any pieces of the starch. Pour on ribs when the sauteeing is completed. Toss in pinapples, stir, cover and pressure cook for 1 hr.
- About a half hour before ribs are ready, start making rice. Start by heating 1 tsp of oil on medium heat in a deep skillet.
- When hot add cabbage, cook for 5 minutes, then add mushroom and cook an additional 5 minutes. Remove from heat and set aside.
- Return skillet to heat, add onions, carrots, green onions and garlic. Cook about 3-4 minutes. Add cabbage and cook for another 5 minutes. Push vegetables aside and add two eggs, cook egg for 2 minutes and scramble. Push eggs over with the vegetables. Add a dash of oil on empty side and add cauliflower. Cook 5 minutes, season with salt.
- Riced cauliflower.
- Mix xauliflower with vegetables, add rest of ingregredients. Cook an additional 5-7 minutes. Add more seasoning if prefered.
- When ready, plate ribs and rice, top with pineapples, cilantro, and sesame seeds.
