Whole30/Paleo loaded potatoes with marinated chicken and cashew cream

Hi There, hows it going.  Back with another recipe for whole30/paleo(loaded potatoes with marinated chicken and cashew cream cheese.  I’ve been working on this recipe for a few weeks.  I had planned to post it sooner but it has been sitting in my draft box.  I was on vacation all of last week, and the motivation to post disappeared sometime during the middle of my vacation.  I spent most of my vacation trying to get my house together but mostly did not accomplish that.  I can’t even really say everything that I actually did, though I still feel like I wasn’t on vacation.  I wonder if its because I did not get the change of environment as I originally planned.  Now I’m sitting here thinking about all the things I should have done.  I have another vacation coming up in July, hopefully, I will be out of town lol.  I’m actually a little sad about returning to work, simply because I don’t feel like having to get up at 5 am and not getting home till about 830 pm……sigh.  So I’ve have eaten a lot of carbs and sugar this week, which makes me want to go do full 30 days of whole30.  I feel like I’ve already gained 10 lbs, which I don’t think is necessarily the case but my body just doesn’t really react that great to eating completely outside of the whole 30/paleo.

 

This whole30/paleo loaded potatoes with marinated chicken will be perfect for my detox.  I love potatoes, and also dairy, but since my body doesn’t like dairy, I made a vegan cheese sauce, with cashews, coconut milk, and red pepper, and nutritional yeast, plus other ingredients.  This is adapted from serious eats https://www.seriouseats.com/recipes/2014/02/gooey-vegan-nacho-cheese-sauce-recipe-food-lab.html  The sauce is simple and quick, with marinated chicken, bacon, and potatoes, almost like loaded nachos, except it is made with air fried potatoes.  Whole 30 is definitely a lifestyle change that I think anyone can accomplish, there are so many resources to help anyone get started.  I definitely am someone whole loves encouraging others.  To keep this short, go ahead and try this recipe.  Make sure to comment.

Loaded potatoes ehole30/paleo style, with marinated chicken and crispy bacon.

chicken
  • 2 lbs boneless/skinless thighs
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp onion salt
  • 1 tsp salt
  • 1 tsp cumin
potatoes
  • 5 medium potatoes
  • 1 tsp salt
sauce
  • 3/4 cups raw cashwes
  • 1 cup Water
  • 1 small red pepper seeds removed and diced
  • 1 small jalapeno seeds removed and diced
  • 1 small gold potato washed and diced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 3/4 tsp chipotle powder
  • 1 tsp cumin
  • 1/2 tsp onion salt
  • 1 tsp smoked paprika
  • 1/4 cup coconut milk solids or cream
  • 3/4 cup coconut milk water
  • 2 tbsp nutritional yeast
  • 1/4 tsp salt

  • 6 strips turkey bacon paleo
  • 1 tsp oil

  • 3/4 cup coconut milk water
  • 2 tbsp nutritional yeast

Instructions
  1. Season chicken and tenderize with a meat tenderizer or poke holes with a fork. refrigerate for at least an hour, preferably overnight. When ready to cook, heat a medium skillet on high heat, add olive oil. Next, add chicken and cook 5 minutes on each side. Remove and cut the chicken into bite-sized pieces, cook another 10 minutes. Place chicken in a container with a lid, and cover.
  2. Heat oil in a small saucepan on medium heat. When hot add peppers, an cashews. cook for 2-3 minutes. Add potatoes and water, cover and cook an additional 12 minutes. Add more water as needed. Turn heat down if it starts to burn.
  3. Place a pot full of water on the stove and bring to a boil. Add 1 tsp of sea salt. Add potatoes to water, boil for 5 min. Now you can cut the potatoes in whichever shape you like, just make sure that is slightly tender.
  4. Now drain potatoes and place on crisper in air fryer about 10 minutes. If you don't have an air fryer, preheat oven to 400, place potatoes on parchment, and bake 10-15 min.
  5. Meanwhile, add cooked cashew mix, and add rest of ingredients for the sauce, blend until smooth. Add more water if too thick. Cashews can be really creamy and thick, it will thicken when cold. Just heat a tiny bit and add additional water to thin out a bit.
  6. Cut bacon into small pieces. Heat skillet with 1 tsp of oil, cook until a little crispy. about 3-5 min.
  7. Add cooked potatoes to a skillet or divide into four bowls. top with sauce, chicken, and bacon. Add anyother topping your would like, such as tomatoes, whole30/paleo sour cream, cilantro, jalapenos.
